Recipe: Quinoa & Egg Muffins

Quinoa & Egg Breakfast Muffins
Here’s a recipe for a quick, easy, nutritious, and FILLING breakfast option to jump-start your mornings! The best part about this recipe is that you can make a big batch at the beginning of the week, because they taste great reheated!
Ingredients:
3/4 cup cooked quinoa
5 egg whites
1/2 cup chopped spinach
1/4 cup red bell pepper
1/4 cup onion
(Or use any of your favorite veggies)
Seasonings: salt, pepper, garlic, Parmesan cheese (optional)


Directions: 
1) Preheat oven to 400 degrees
2) Mix quinoa, egg whites, and veggies. Season the mixture.
3) Coat muffin pans with cooking spray, and add mixture evenly to muffin pans (should make four muffins).



4) Cook for 25-30 minutes, until muffins are cooked throughout and the edges are slightly brown. 

5) Enjoy!

(All four muffins equal one serving.)

Total Fat- 3g
Total Carbs- 38g
Fiber- 6g
Protein- 25g
Sodium- 300mg
