Healthy Recipe: Southwest Breakfast Bowl

Tired of eating oatmeal for breakfast?

Here’s a healthy alternative that’s bursting with flavor and will leave you counting down for your next breakfast!

 

1 serving

 

Ingredients:

¾ cup cooked quinoa or brown rice (I prefer quinoa)

2-3 whole eggs

¼ cup salsa

¼ medium avocado (optional)

Pinch of cilantro (optional)

Seasonings: cumin, chili powder, garlic, crushed red pepper flakes

 

Directions:

  1. Cook quinoa or brown rice separately.
  2. Cook eggs.
  3. Mix with quinoa or brown rice, and add seasonings.
  4. Then, top with avocado and salsa.
  5. Try seasoning with garlic, chili powder, cumin, and crushed red pepper flakes.

 

Note: Prepare 1 ½ cups of cooked quinoa or brown rice to have enough for two days.
