Healthy Recipe: Ground Chicken with Lemon & Kale

Wanting to switch up my meals, I grabbed a couple packages of ground turkey from the store and had no idea how I was going to prepare them. I googled “ground chicken recipes” and saw a winner! I happened to have lemons and kale in the fridge, so I decided to give it a try. Of course, I made my own tweaks, as pictured above, so the original recipe can be found here. SERVINGS: 3-4

Ingredients

2 tablespoons olive oil
1 small onion, minced
4 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1 pound ground chicken
1 teaspoon sea salt and freshly ground black pepper (season to taste)
1 lemon, very thinly sliced and seeds removed
1 large bunch curly kale, destemmed
DIRECTIONS

1) Lightly coat a skillet with olive oil and warm over medium heat.

2) Add onions, garlic, and red pepper flakes. Cook until softened, stirring constantly.
3) Add ground chicken and cook until browned, breaking up clumps. Season to taste with salt and pepper.
4) After browned, add kale and top with lemon slices. Cook until kale is bright green and lemon slices are slightly tender
5) Enjoy alone, or serve over brown rice or quinoa.

    I’ve boiled ground beef in bulk before, but I’d never seen how to do it in the crockpot. Brilliant! Pre-cooked ground beef is such a huge time saver. Thanks for sharing this.
