¾ cup cooked quinoa or brown rice (I prefer quinoa)
2-3 whole eggs
¼ cup salsa
¼ medium avocado (optional)
Pinch of cilantro (optional)
Seasonings: cumin, chili powder, garlic, crushed red pepper flakes
- Cook quinoa or brown rice separately.
- Cook eggs.
- Mix with quinoa or brown rice, and add seasonings.
- Then, top with avocado and salsa.
- Try seasoning with garlic, chili powder, cumin, and crushed red pepper flakes.
Note: Prepare 1 ½ cups of cooked quinoa or brown rice to have enough for two days.
